The study was performed on 100 random samples (about 250-500 g for each) of frozen chicken meat cuts (wings; drumstick; thigh and breast, 25 of each) purchased from different markets at Kaliobia Governorate, to study the bacteriological profile; sanitary status of them and their suitability for human consumption, besides studying the enterotoxins production of the isolated S. aureus strains The bacteriological examination of frozen chicken meat cut samples (wings; drumstick; thigh and breast) cleared that, the mean value of APC; total Psychrotrophic; total Enterobacteriaceae; total Coliform; total Staphylococcus and total S. aureus counts (CFU) in wing samples were 8.16×105 ±0.37×105; 4.91×10 5±0.25 ×105; 3.85×10 3±0.31 ×103; 2.66×10 3±0.29 ×103 ; 2.69×103 ±0.17 ×103 and 1.20×103 ±0.18 ×103, respectively; for drumstick samples were 7.85×105±0.35×105; 4.74×105±0.25 ×105; 3.51×103±0.27 ×103 ; 2.12×103± 0.23 ×103 ; 2.45× 103±0.15 ×103 and 1.00×103± 0.10 ×103, respectively; for thigh samples were 6.76×105±0.37×105 ; 4.41×105 ±0.24 ×104 ; 3.18×103 ±0.24 ×103; 2.01×103 ±0.18 ×103; 2.21×103 ±0.14 ×103and 0.90×103 ±0.13 ×103, respectively and for breast samples were 5.58×105±0.43×105; 3.88 ×105 ±0.30 ×105; 2.97×103 ±0.24 ×103; 1.84×103 ±0.16 ×103; 1.75×103 ±0.11 ×103 and 0.78 ×103 ±0.16 ×103, respectively. Regarding to the bacterial isolates:• The results declared that, 11 isolates of E. coli were isolated from examined samples represented as four (two O55: H7; one of each serotype O125:H18 and O146: H21) from wing samples; three (one of each serotype O55: H7; O111:H4 and O146: H21) from drumstick samples; two (one of each serotype O111:H4 and O125:H18) from thigh samples and two (one of each serotype O55:H7 and O125:H18) from breast samples. Moreover, 89 samples out of 100 ones were accepted for human consumption.• Meanwhile, for Coagulase positive S. aureus, the results appeared that, 21 Coagulase positive S. aureus strains were isolated from frozen chicken meat cuts represented as 7(28.0%) from wing samples followed by drumstick (6 /24.0%) and thigh ; breast meat samples (4/16.0 % for each ). Moreover, 79 samples out of 100 ones were accepted for human consumption. In addition, for Enterotoxins producing S. aureus strains ,the results of SET- RPLA test showed that, five S. aureus (62.5%) out of eight randomly examined ones ,two from each sample type were enterotoxigenic and classified according to type of toxin into (3A; 1C and 1D).• Moreover, the present study failed to isolates Salmonella serovars from all examined frozen chicken meat cut samples.
